FOOD RECIPE: Lobster stew a holiday favorite

Wiscasset Maine Lobster Stew

(To make about 1 quart)

1 2-lb. lobster or a couple of 1 pounders

8-10 Tbsp. butter

2 thick slices of onion

2 cups milk

2 cups light cream

Salt, pepper

1/4 teaspoon Paprika

Directions:

Cook lobster in salted water for 15 minutes. Drain; remove meat from shell. Reserve shell and coral (eggs) if any; chop meat into pieces

Heat broken shells in 3 Tbsp. of the butter and Paprika. Add onion and sauté 5 minutes.

Add milk and cream and salt and pepper to taste. Bring to a simmer and simmer 5 minutes more. You can let it sit like this, off the heat, until you're almost ready to serve it.

Strain into another saucepan. Add lobster and coral. Reheat with remaining 3 Tbsp. butter.
